As a native Northwesterner, it is all but bred into me to love fresh salmon, especially the wild-caught varieties! It was also a hit with my sweetie because he loves salmon and avocado.
When we were testing recipes for this special contest episode, this salmon ultimately won because of the way the spices work with the avocado salsa. It is also a simple recipe, so it's a good companion to the souffle and macaroni and cheese, which are complex.
Really, it doesn't get much easier. Spread on the spices, sear, roast to finish; top with bright avocado salsa. Doesn't that sound like an awesome thing to do with fresh delicious salmon? I bet it would be great applied to chicken, pork, or even halibut!!
From a nutritive perspective, this dish offers a boat load of vital healthy fats. Salmon is laden with omegas and avocado is packed with monounsaturated fats. To top it all off there is fresh tomato, which is rich in heart-healthy lycopene. Wow, talk about eating your vitamins! Your skin, heart, and mind will love this entree!

Roasted Salmon with Avocado Salsa Recipe
Ingredients:

Avocado Tomato Salsa
|
Instructions:
- Make the Salsa first
- Mix all the indgredients but the avocado together well.
- Gently fold in the chopped avocado.
- Refrigerate.
- Pull out of fridge 20 minutes before serving.
- Season the salmon with all the salmon spices.
- Pan Sear 2-3 minutes over medium-high to develop spice flavor and nice color.
- Finish in the oven at 400 degrees F for 5 minutes.
- Top the salmon with the avocado salsa.
