As a native Northwesterner it is all but bred into me to love fresh salmon, especially the wild caught variety! It was also a hit with my sweetie because he loves salmon and avocado.
When we were testing recipes for this special contest episode, this salmon ultimately won because of the way the spices work with the avocado salsa. Another great benefit to this recipe in the lineup of episode #75 was that it is a simple recipe. The souffle and macaroni and cheese are a bit more complex. We try to balance complexity, flavor, texture, cost, and to some degree nutrition when we design a menu to feature on Hot Kitchen.
Really, it doesn’t get much easier. Spread on the spices, sear, roast to finish; top with bright avocado salsa.
From a nutritive perspective, this dish offers a boat load of vital healthy fats. Salmon is laden with omegas and avocado is packed with monounsaturated fats. To top it all off there is fresh tomato, which is rich in heart-healthy lycopene. Wow, talk about eating your vitamins! Your skin, heart, and mind will love this entree!
